Nutrient Dense Green Soup
This is my go-to soup when I need an easy and delicious way to get lots of veggies. I don’t know about you, but with busy lifestyles, it can sometimes be hard to get the amount of veggies I need in a day. Blended soups and stews are perfect for this! Also, they are easy to digest and soothing for the mucosal lining of the intestines. It is tasty, nourishing and will last for a few days to a week in the fridge.
RECIPE
5 stalks of celery
1 bag frozen peas (omit for AIP)
1 yellow onion
A couple handfuls of spinach
Half a bunch of kale
5 cloves of garlic
Half bunch of parsley
½ quart of bone broth or stock
5 tablespoons olive oil
Dash of Apple Cider Vinegar
Place all of the ingredients (except the stock) in a large cook pot and cook covered until all of the veggies are soft and pliable (approx 20 min). Once cooked, carefully put the ingredients in a high powered blender, and blend until smooth. Put the soup back into the pot and add the bone broth as well as salt and pepper to taste.
